How much of MgSO4 (in grams)/470,000,000 mL = 100ppm
I'm trying to increase my Pool water hardness by adding magnesium sulfate I'm not sure If I have to add 140 grams, 210 grams, or over 380 grams to increase hardness up to 100 ppm from my original hardness level of 130 ppm.

Why in the world are you trying to increase Total Hardness by adding Magnesium Sulfate? It is Calcium Hardness (CH) that matters with regard to protecting plaster surfaces -- saturation of calcium carbonate is what matters, not magnesium. You increase CH by adding Calcium Chloride and can use The Pool Calculator to calculate dosages.
