Piping questions etc

Have an older house in ground pool came with a starite filter, old. Picked up a pentair which will flow more. Attaching a photo of my current piping.
1. What is the gray valve on the left, small knob on top and can I eliminate it, have turned the knob in the past, doesn't seem to do anything.
2. There's a 1" pipe coming out of the ground on the right, its capped off, what's it for?
3. Always wondered about the drain in the deep end. Doesn't seem like there's any way to use it. But have changed water in the past with a submersible so not a issue, just curious.
