Coping stones relaying .

The coping stones around my pool are the final detail to be completed after a re-line and paving surround refurb .
The coping stones need relaying and pointing where the liner and underside of the coping stone meet .

A paving specialist will do the work ,ie the one who relaid all the surrounding slabs .

Is there a special mortar/mastic for this job and can it be done with the pool 2/3 full as it is now , without too much material getting in the water?
