In mid Jan ins Goose Creek, SC, I shut the pump off for a week to go on vacation. I came back, filled the pool water level back up and primed the pump. It took off without any issues. Since then, the prime is not kept and I have to fill the pump's waste basket area up with water every time I turn it back on. Each time, it starts up without any issues.

Suspect an air leak. Check the pump lid and o-ring, pump unions, cell housing, filter unions etc. If no luck with those and you have a sand filter then maybe check the multi-port valve spider gasket.

Would I not see this issue while it starts up or while the pump is running?

You will 'see' this issue when you turn the pump off. The pump bowl will drain.
